If you are new to cheesemaking or simply curious about the process this is a great place to start. We will make a simple mozzarella to eat in class while we discuss cheesemaking basics. Topics will include milk sources and transport, rennet and cultures, curds and whey. We will taste 4 types of cheese and discuss the qualities of each including fresh, brined, waxed and bloomy rind cheeses.
